(Lab required) Food preparation, preservation, handling and storage; quality and safety implications; scientific basis for culinary practice; use and application of equipment. Prerequisites: [HNSC 1200 or HNSC 1210] and CHEM 1100 (CHEM 1101), (or the former CHEM 1300 or CHEM 1301).
